Chef Giovanni Novella's culinary story is deeply rooted in the coastal traditions of southern Italy, where he was raised in the fishing village of Torre del Greco. He honed his craft at culinary school in Sorrento and a prestigious pastry program in Amalfi, specializing in southern Italian dishes and desserts.
After working in kitchens across Europe and South America, Giovanni moved to San Diego. There he met his wife, a native of Madison, and together they made the city their home in 2016 to raise a family. Drawn to Madison's vibrant culinary scene, Giovanni quickly made his mark on the local dining scene.
While finding success, Giovanni held a personal vision for something more intimate and authentic: an osteria that would pay tribute to his Italian heritage and share the vibrant flavors of his seaside hometown with his new community. That dream has now culminated in Osteria Novella.
Evan Ackers brings a wealth of expertise and a passion for hospitality to Osteria Novella. A longtime friend and business partner of Chef Giovanni, Evan has been a fixture in Madison's dining scene for years, having successfully managed Bar Corallini and other popular restaurants.
As the General Manager, Evan is dedicated to ensuring that every guest experience is seamless and welcoming. His philosophy is rooted in creating a warm, inviting atmosphere where genuine hospitality and a love of community are at the forefront, perfectly complementing Chef Giovanni's culinary vision.
